Coconut and Chocolate Protein Bars



This is my first day on the Whole30 January Challenge and I am already craving sweets!!!

I decided to do this Whole30 Challenge because I have already been following the Autoimmune Protocol (AIP) since January 2016 and it has helped me tremendously with clearing up my skin hives/rashes, brain fog, digestive issues, mood swings and so many other symptoms. However, I knew that I was still having some troubles with too many Paleo Treats. Event though these are better than conventional desserts and treats, they still have an insane amount of added (natural) sweeteners and my body was screaming for a break!

So, I created these little beauties and one small bite satisfies my cravings, hopefully that will desist throughout this journey.

Coconut & Chocolate Protein Bars

New Year, new recipe ideas beginning with these coconut and chocolate protein bars that are AIP, Paleo & Whole30 compliant.


  • 1 cup dates (softened) (microwave or stovetop, pitted)
  • 3/4 cup shredded coconut
  • 1 tbsp melted coconut oil
  • 1/2 cup coconut cream


  • 3 tbsp melted coconut oil
  • 2 tsp carob powder
  • 2 scoops collagen peptides (Vital Proteins scooper is 25 milliliters)


  1. Grease your silicone mold or loaf pan (5″ x 9″ works well) with coconut oil.

  2. Place all ingredients in a blender (I use a Vitamix) and blend till a thick consistent paste forms. 

  3. Scoop the crust into your silicone mold or loaf pan no more than 50% to the top to save room for the filling. 


  1. Add all ingredients to a sauce pan and whisk together till well mixed.

  2. Carefully pour contents over crust. Let set in refrigerator for 2-3 hours or until solid and enjoy!
